Niche sites and how to get Google rankings

I've been working on SEO stuff with a couple of the niche sites I've been working with.

Site #1 is a site about earning your degree online.

Remember when I said you should use "anchor" text in backlinks? I know some of you were confused so I want to give some examples. For instance, if I wanted to get rankings for the term "online bachelor degree" I would use that in my anchor text like so:

Online Bachelor Degree

Or for "online psychology degree" would be Online Psychology Degree

Site #2 is a site that already has rankings. It's a debt site and we've spent a lot of time and money optimizing this.

So this one has several new pages. One of them is the term "legal debt elimination" and so my anchor text would look like this:
